Rice-So-Nice
- 1 tablespoon butter
- 6 ounces mushrooms, sliced
- 1 cup long grain white rice
- 1 (10 1/2 ounce) can low sodium beef broth
- 1 (10 1/2 ounce) can condensed French onion soup
- 2 tablespoons butter, cut in small cubes
- Melt butter over medium heat in an oven safe saucepan.
- Add mushrooms and saute until soft.
- Turn off heat.
- Add rice, beef broth and condensed French onion soup (do not dilute).
- Scatter butter over the top.
- Cover tightly and bake at 375F for 1 hour.
- Stir, then let stand covered 5 minutes before serving.
