Fruit-Stuffed Lemon Pepper Chicken

  1. HEAT oven to 375F(190C).
  2. COMBINE onion, apple, dried apricot and butter.
  3. With fingers, gently loosen skin from meat of each chicken breast.
  4. Place 2 to 3 Tbsp (10 to 15 mL) of fruit mixture under skin.
  5. Press skin back in place.
  6. EMPTY coating mix into bag.
  7. Moisten chicken with water and carefully roll in coating mix, one piece at a time.
  8. Place on shallow, foil lined pan and bake 45 minutes.
