Fruit-Stuffed Lemon Pepper Chicken
- 2 green onions, finely chopped
- 1 red apple, chopped Safeway 1 lb For $0.99 thru 02/09
- 1/2 cup finely chopped dried apricots
- 1 Tbsp. melted butter or margarine
- 6 chicken breast, skin on
- 1 envelope Shake'N Bake Lemon Pepper Coating Mix
- HEAT oven to 375F(190C).
- COMBINE onion, apple, dried apricot and butter.
- With fingers, gently loosen skin from meat of each chicken breast.
- Place 2 to 3 Tbsp (10 to 15 mL) of fruit mixture under skin.
- Press skin back in place.
- EMPTY coating mix into bag.
- Moisten chicken with water and carefully roll in coating mix, one piece at a time.
- Place on shallow, foil lined pan and bake 45 minutes.
