Korean beef in lettuce
- 2 x beef, sirloin steak 2.5cm/1in thick, thinly sliced against the grain
- 2 tablespoons soy sauce, tamari
- 1 tablespoon sugar
- 1/2 tablespoon black pepper ground
- 1 tablespoon chili bean sauce
- 3 tablespoons soy sauce, tamari
- 1 tablespoon rice wine
- 2 inches ginger knob,grated
- 2 cloves garlic crushed
- 2 x onions spring,fined sliced
- 1 tablespoon sesame seeds
- 1 x lettuce round soft leaved
- 2 tablespoons chili bean sauce
- Mix the spring onions, garlic, ginger, sesame oil, rice wine, soy sauce, chilli bean or sweet chilli sauce, pepper and sugar, stirring well to dissolve the sugar.
- Add the beef, coating it well and leave to marinate for an hour or longer.
- Gently remove the leaves from the lettuce, wash and drain on a paper towel, and chill until ready to serve.
- Make the sauce: mix the soy and chilli sauce in a small bowl.
- Heat a heavy frying pan until hot and sear the beef over a high heat for 1 or 2 minutes, leaving it still pink in the middle.
- Scatter with sesame seeds and serve on a warm plate with hot rice and the chilled lettuce cups.
- Spoon a little rice on to a lettuce leaf, add a slice or two of spicy beef and a little soy chilli sauce, rollup and eat.
