Bratwurst With Caramelized Shallots And Apples Recipe

  2. Prepare ingredients: Peel and trim shallots and separate into sections.
  3. Peel apples, cut into eighths, and core.
  4. Cook bratwurst, halve lengthwise, and cut on the diagonal into 1/2-inch wide pcs.
  5. Halve napa cabbage and shred.

  7. In a large, heavy-bottomed saucepan, cook shallots in oil and butter over moderately high heat, stirring frequently, till browned, about 7 to 8 min.
  8. Add in 2 c. stock and cook till nearly all the liquid has evaporated, about 17 to 18 min.

  10. Add in apples and cook, stirring gently, for 1 minute.
  11. Add in remaining 6 c. stock along with the bratwurst, cabbage and caraway seeds; cook till sausage is heated through and apples are tender, 7 to 8 min.

  13. Season with salt and pepper and serve immediately.
