Baked Mini Cauliflower & Cheese Balls
- 1 head Cauliflower, Cored, Separated Into Florets
- 2 whole Eggs, Beaten
- 1 teaspoon Salt And Black Pepper To Taste
- 1/2 cups Panko Or Plain Bread Crumbs
- 1 Tablespoon Fresh Chopped Parsley
- 1- 1/4 cup Aged White Cheddar Cheese, Grated
- FOR THE SAUCE (optional):
- 3 Tablespoons Mayonnaise
- 1 Tablespoon Ketchup
- 1 teaspoon Dill
- 1 Tablespoon Hot Sauce, Your Choice
- Preheat oven to 400 degrees F.
- In a food processor, add cauliflower florets and pulse several times.
- Add beaten eggs, salt, black pepper, panko, and parsley.
- Process just until combined.
- Remove and transfer to a large mixing bowl.
- Add grated cheese and stir with a sturdy spatula.
- Using a scoop, form balls and place in a mini 24-count muffin tin (I use nonstick).
- Bake 15 minutes or until golden brown.
- For the serving sauce, if using, in a small mixing bowl add all ingredients and stir well to combine.
- Serve on the side.
