Creamy Broccoli Cheddar Soup
- 2 tablespoons butter
- 12 cup chopped onion
- 1 (7 ounce) package ZATARAIN'S Cheddar Broccoli Rice
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Melt butter in large saucepan on medium heat.
- Add onion; cook and stir 3 minutes or until tender.
- Stir in Rice Mix and stock; bring to boil.
- Reduce heat to low.
- Stir in cream; cover.
- Simmer 25 minutes, stirring occasionally.
- Remove from heat.
- Stir in cheese.
- Let stand 5 minutes before serving.
