Tuna Steaks, Seared with Salsa
- 2 cups instant white rice, uncooked
- 2 Tbsp. canola oil
- 2 medium green peppers, chopped
- 2 medium red peppers, chopped
- 12 oz. (4 3-oz. steaks) fresh or frozen tuna fillet or steak (thawed if frozen)
- 1 cup TACO BELL HOME ORIGINALS Salsa
- 1/4 cup mirin (sweet rice wine)
- 2 cups frozen corn
- 32 fl oz (4 cups) MAXWELL HOUSE Coffee, Regular or Decaf Walgreens $6.99 thru 02/06
- Cook rice according to package directions.
- Add your favorite fresh or dried herbs to season.
- Heat oil over medium heat; add peppers.
- Saute 2 to 3 min.
- Add tuna fillets and sprinkle 2 to 3 Tbsp.
- water over top; increase heat to high and brown each side 2 min.
- Reduce heat to medium-low; add salsa and wine.
- Cover and simmer 10 min.
- Serve over rice.
- Heat corn as directed on package.
- Divide into 4 equal portions.
- Serve each person an 8 fl oz cup of coffee with the meal.
