Barley And Mushroom Pilaf Recipe

  1. Soak barley overnight to cover in cool water.
  2. Drain and saute/fry onion and barley in oil till onion is tender and barley is toasted.
  3. Add in mushrooms and cook 2 to 3 min longer.
  4. Spoon into large casserole.
  5. Heat 4 c. broth to boiling.
  6. Pour over barley and stir.
  7. Bake covered in 350 degree oven for 1 hour.
  8. Uncover and bake 1 to 1 1/2 hrs till liquid is absorbed.
