Arugula and Pear Salad with Grapefruit and Orange Dressing
- 13 cup grapefruit juice freshly squeezed
- 13 cup orange juice freshly squeezed
- 4 tablespoons olive oil, extra-virgin
- 1 x salt to taste
- 1 x black pepper freshly ground, to taste
- 6 ounces arugula (roquette) rinsed, dried and torn
- 1 each pears cored and sliced
- 1 each sweet red bell peppers thinly sliced
- In a medium bowl, whisk together grapefruit juice, orange juice, olive oil, and salt until well blended.
- In a salad bowl, add arugula, pear, and red pepper.
- Drizzle dressing all over the salad, and toss to coat evenly.
- Serve.
