Chili Boats
- 2 large baking potatoes
- 1 lb ground turkey
- 1 tablespoon cooking oil (use Canola Balance, it's healthy)
- garlic powder (I use a whole gang of it!)
- 1 medium onion, finely chopped
- 14 cup tomato paste
- 1 tablespoon chili powder
- 2 teaspoons oregano
- 14 cup light soy sauce, mixed with 3/4 cup water
- 2 tablespoons butter substitute (I use Smart Balance. Terrific taste and healthy. What more could one ask?)
- 1 teaspoon chili powder (to mix in the potatoes)
- chopped parsley (to garnish)
- Bake taters at 350F about 1 hour 15 minutes or until just softening.
- Don't overcook.
- You can do this with the microwave if you prefer.
- Slice off the tops and scoop out most of the flesh of the potato, leaving about 1/4 inch shell.
- Cook garlic powder and onion in oil until onion wilts.
- Add turkey and cook until brown and loose.
- Add tomato paste and cook until brown.
- Add the two tsp chili powder and soy mixture.
- Stir well, cover and simmer for 30 minutes.
- Add oregano.
- Whip the scooped out potato with the single tsp chili powder, butter, and black pepper to taste.
- Spoon turkey and chili mixture into hollow potatoes and top with the mashed potatoes.
- Put the assembled boats in the 350F oven to heat through.
- If desired, place the boats under the broiler until browned.
- Plate up and garnish with chopped parsley.
