Very-Berry Clafouti
- 2 cups raspberries
- 1 cup blueberries Whole Foods 3 For $10.00 thru 02/09
- 2 eggs
- 1-1/2 cups thawed Cool Whip Whipped Topping
- 2 Tbsp. brandy
- 1/4 cup flour
- 1 Tbsp. sugar
- 1/4 tsp. grated lemon zest
- Preheat oven to 375F.
- Mix berries in 9-inch pie plate or casserole dish sprayed with cooking spray.
- Place eggs, whipped topping and brandy in blender; cover.
- Blend 30 sec.
- or until smooth.
- Add flour, sugar and lemon peel; cover.
- Pulse 30 sec.
- or until well blended.
- Pour over berries.
- Bake 20 min.
- Remove from oven.
- Preheat broiler.
- Broil, 5 to 7 inches from heat, 2 to 3 min.
- or until top is puffed and golden brown.
- Let stand 10 min.
- before serving.
