Curried Tofu Salad
- 3 tablespoons yogurt, low-fat plain
- 2 tablespoons mayonnaise, fat free
- 2 tablespoons mango chutney prepared
- 2 teaspoons curry powder
- 1/4 teaspoon salt
- 1 x black pepper freshly ground to taste
- 14 ounces tofu 1 package, extra-firm water-packed, drained, rinsed and finely crumbled
- 2 stalks celery diced
- 1 cup red grapes sliced in half
- 1/2 cup scallions, spring or green onions sliced
- 1/4 cup walnuts chopped
- Whisk yogurt, mayonnaise, chutney, curry powder, salt and pepper in a large bowl.
- Stir in tofu, celery, grapes, scallions and walnuts.
