Rhubarb Compote

  1. Peel rhubarb (if desired) and cut into small pieces.
  2. In a medium saucepan, caramelize sugar until light brown.
  3. Add Orange juice, then rhubarb.
  4. Let cook for 5-10 minutes, until the rhubarb is softened and the sugar dissolved.
  5. Dissolve corn starch with a little water, add to rhubarb compote to thicken.
