Rhubarb Compote
- 400 grams Rhubarb
- 50 grams Sugar
- 60 ml Orange juice
- 1 tbsp Corn Starch
- Peel rhubarb (if desired) and cut into small pieces.
- In a medium saucepan, caramelize sugar until light brown.
- Add Orange juice, then rhubarb.
- Let cook for 5-10 minutes, until the rhubarb is softened and the sugar dissolved.
- Dissolve corn starch with a little water, add to rhubarb compote to thicken.
