Pineapple Pudding Cake Recipe
- 1 (16 ounce.) can crushed pineapple
- 1 yellow pudding cake mix
- 1 c. pineapple juice
- 3 Large eggs
- 1/4 c. vegetable oil
- 3/4 c. coconut
- 3/4 c. minced nuts
- 1/2 c. butter
- Drain pineapple well.
- Reserve 1 c. juice.
- Mix together cake mix, pineapple juice, Large eggs, and oil.
- Beat well.
- Grease and flour tube pan.
- Mix coconut, nut, and butter.
- Spread in bottom of pan.
- Pour cake batter over nut mix.
- Sprinkle well liquid removed pineapple over top.
- With fork, lightly mix into top of batter.
- Bake in 350 degree preheated oven for 35-45 min.
