Salmon Pasta Salad (21 Day Wonder Diet: Day 17)
- 1 cup spiral pasta
- 170 g asparagus, trimmed and chopped coarsely
- 2 tablespoons low-fat ricotta cheese
- 1 teaspoon lemon rind, finely grated
- 14 cup lemon juice
- 1 garlic clove, crushed
- 1 small red capsicum, sliced thinly
- 13 cup flat leaf parsley, chopped coarsely
- 2 green onions, sliced thinly
- 210 g salmon, in springwater drained and flaked
- Cook pasta in medium saucepan of boiling water, uncovered, until just tender.
- Add asparagus, cook 1 minute.
- Drain.
- Meanwhile, combine cheese, rind, juice and garlic in large bowl; add pasta, asparagus and remaining ingredients to bowl.
- Toss to combine.
