Baked Stuffed Apples In Rioja Syrup Recipe
- 1/4 c. Raisins
- 1/4 c. Pine nuts Zest of 2 oranges
- 1 1/2 c. Lowfat milk
- 6 x Egg yolks
- 2 x Large eggs
- 8 x Macintosh apples peeled, and in acidulated water
- 3 c. Red Rioja wine
- 3 c. Sugar
- Preheat oven to 375 degrees.
- In a mixing bowl, stir together raisins, pine nuts, orange zest, lowfat milk, egg yolks and egg till well blended.
- Partially core apples to leave bottom for filling and place in a roasting pan just large sufficient to hold them.
- Pour wine into pan and pour sugar over apples into pan.
- Fill core holes with custard mix and place in oven.
- Cook 40 min, or possibly till apples are tender.
- Remove pan from oven, carefully remove apples from pan and pour syrup into small pitcher.
- Serve hot or possibly at room temperature with syrup on the side.
- This recipe yields 8 servings as a dessert.
