Lesleigh's Cornbread

  1. Preheat oven to 375.
  2. Grease a cast iron skillet and place in oven to heat.
  3. In a mixing bowl, combine cornmeal, flour, salt, and pepper.
  4. Add buttermilk and mix thoroughly.
  5. Taste batter to see if it is overly bitter.
  6. If so, add about 2 tbsp.
  7. sweet milk.
  8. (DO NOT ADD SUGAR!)
  9. Add egg and oil.
  10. Pour into hot skillet.
  11. Return to the oven and bake for 30-45 minutes or until done.
  12. Serve hot!
