Benedictine Recipe

  1. Remove half of skin from cucumber and chop finely.
  2. Drain in colander to remove liquid.
  3. Chop onion.
  4. Soften cream cheese in microwave for 20 seconds.
  5. Beat cream cheese and mayonaise till creamy, then beat in liquid red pepper and food coloring.
  6. Fold in cucumber and onion.
  7. Refrigerateand serve on bread or possibly crackers.
