Avocado and Tomato Sandwiches With Jalapeno Mayonnaise
- 12 cup mayonnaise
- 3 tablespoons pickled jalapeno peppers, drained and finely minced
- 1 tablespoon lemon zest, grated
- 14 teaspoon salt
- 18 teaspoon fresh coarse ground black pepper
- 8 slices whole-grain bread, toasted
- 1 avocado, ripe, peeled and sliced
- 1 tomatoes, sliced
- 1 cup alfalfa sprouts or 1 cup arugula
- Prepare the jalapeno mayonnaise by combining the ingredients in a small bowl.
- Mix until blended, then spread on 4 pieces of the toasted bread.
- Arrange the avocado and tomato slices on top and top with alfalfa sprouts and the remaining bread.
- Cut each sandwich in half and serve.
