Green Pea Soup

  1. Melt butter in a large sauce pan.
  2. Add scallions, potato and garlic then cover and cook over low heat for 10 minute.
  3. Add peas, stock, salt and pepper to taste bring to a boil and simmer 15 minute.
  4. Remove from heat and puree until liquefied.
  5. Reheat and add remaining peas.
  6. Cook until peas are just tener and add cream.
  7. Season to taste with salt and pepper if necessary.
