Green Pea Soup
- 2 tablespoons butter
- 12 scallions, coarsely chopped
- 1 potato, diced
- 1 garlic clove, crushed
- 12 ounces frozen peas
- 3 14 cups chicken stock
- 6 ounces frozen peas
- 5 ounces heavy cream
- salt
- pepper
- Melt butter in a large sauce pan.
- Add scallions, potato and garlic then cover and cook over low heat for 10 minute.
- Add peas, stock, salt and pepper to taste bring to a boil and simmer 15 minute.
- Remove from heat and puree until liquefied.
- Reheat and add remaining peas.
- Cook until peas are just tener and add cream.
- Season to taste with salt and pepper if necessary.
