Basic Sponge Sandwich
- 2 eggs
- 3 ounces caster sugar
- 3 ounces self raising flour
- Break eggs into a bowl, whisk lightly slowly adding the sugar then whisk well until thick, creamy and almost white in colour.
- Lightly fold the flour into the mixture.
- Place in well greased cake tin 7inch=18cm.
- Bake at 180C,350F Gas Mark 4 for 30 mins - Do not open the oven door till cake is cooked or it may flop.
- Once cooled slice and add fillings and enjoy.
