Sig's Tasty Filled Mini Loaf
- 1 small crusty loaf , like petit parisienne, panini or any round cob loaf white or dark .
- 1 tsp olive oil
- 4 spring onions (green onions or scallions ) finely chopped
- 2 cloves garlic finely chopped
- 1 charred pepper in oil
- 8 olives , black , stones removed and halved or chopped
- 1 pinch each salt or salt substitute and cayenne pepper
- 75 to 100 grams grated mozzarella
- 6 slices petit chebra ( brie like goats cheese)
- 3 tbsp grated parmesan cheese
- 2 Hot and spicy pickled sun dried tomatoes chopped (optional ( I run out ) )
- 4 slices of chopped, dry cured chorizo (optional)
- First preheat oven to about 175 C
- Then cut the crust lengthways of your chosen bread 2-3 times Almost all the way through.
- The cut it I again the short way about 1-2 inches apart almost all the way through.
- The bottom must still be intact.
- Heat a frying pan with one teaspoon olive oil ,add the onions ,the garlic, the chopped pepper and then the olives (hot , pickled sun dried tomatoes and/or dry cured and chopped chorizo if using ), heat all the way through .
- Turn off heat but leave to sit on stove.
- Now open up the bread , keeping the bottom intact and fill the cuts with the ingredients from the pan
- Then fill the cheeses into the gaps and sprinkle with parmesan
- Put into a baking dish and bake for about 25 minutes or until all the cheese has melted .
- Serve with a salad if you like
