Chicken Marsala Penne
- 2 large boneless, skinless chicken breasts; cut into bite sized pieces
- 10 to 12 ounces sliced mushrooms
- 1 small onion, diced
- 3 clove garlic, minced
- 3/4 cup Marsala cooking wine
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 lb dry pasta + water for cooking (I used penne, rigatoni is also good)
- 1 cup Parmesan cheese + more for serving
- 5 tbsp unsalted butter
- 1 salt and pepper to taste
- 1 minced, chopped fresh parsley for garnish
- Makes: 4-6 servings
- *I made a topping out of the chopped parsley by mixing : 1 tbs of olive oil, 1 chopped roma tomato, 2 fresh minced garlic cloves, & less than 1/4 cup of chopped parsley.
