Pina Colada Cupcakes Recipe

  1. Preheat the oven to 350A degrees F. Line cupcake pans with liners.
  2. With an electric mixer at medium speed beat together the melted butter, pineapple juice, rum, and vanilla until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl combine the flour, sugar, baking powder, baking soda, and salt.
  5. With the mixer on low speed, add the dry ingredients to the creamed mixture 1/2 cup at a time until combined.
  6. Fold in the pineapple and coconut.
  7. Fill the cupcake liners three-quarters full.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
