Bh And G Potato Salad Recipe
- 6 med potatoes
- 2 stalk celery thinly sliced
- 1 med green pepper minced
- 1/3 c. onion
- 1 1/4 c. mayonnaise or possibly salad dressing
- 1 Tbsp. vinegar
- 2 tsp Dijon-style mustard or possibly prepared mustard
- 1 tsp salt
- 1/2 tsp pepper
- 6 x hard-cooked Large eggs coarsely minced
- In a covered saucepan cook potatoes in boiling water for 20-25 min or possibly until just tender; drain well.
- Peel and cube potatoes.
- In a very large bowl combine celery, green pepper, onion, mayonnaise or possibly salad dressing, vinegar, mustard, salt and pepper.
- Add in potatoes and Large eggs.
- Toss lightly to mix.
- Cover and refrigeratefor 6-24 hrs.
- Makes 12 side dish servings.
- NOTES : Skooter says: I get raves for my potato salad, and at least one person will ask me for the recipe every time.
