Chicken & Cabbage with Tomatoes

  1. Cut the chicken and the cabbage into bite-sized pieces.
  2. I also used 1 small eggplant.
  3. Heat olive oil in a pot.
  4. Lightly cook the surfaces of the chicken.
  5. Add the cabbage and the ingredients.
  6. Cover with a lid and steam.
  7. Remove the lid after 1-2 minutes.
  8. The chicken and the vegetables should be pretty much cooked through.
  9. I recommend using an Italian brand of canned tomatoes.
  10. Add the tomatoes and the ingredients.
  11. Cover with the lid again and simmer for 5 minutes.
  12. Season with and it's done.
  13. Serve on a dish and, if you have it, garnish with basil.
