Circles and Squares

  1. In a large saucepan, melt the butter over moderate heat.
  2. Add the onion and red pepper and cook for 5 minutes or until vegetables are tender.
  3. Stir in carrots, 1/4 cup apple juice, basil, salt, and black pepper.
  4. Bring to a boil.
  5. Lower the heat and simmer, covered for 7-9 minutes or until carrots are crisp tender.
  6. In a small bowl, stir together the remaining 1/4 cup apple juice and the cornstarch, then stir into the simmmering carrot mixture.
  7. Cook for 2 minutes or until the mixture is thickened.
  8. Remove from heat.
  9. Stir in the olives.
  10. Sprinkle with parsley.
