Turkey Chili
- 2 lbs lean ground turkey or 2 lbs cooked turkey
- 2 medium onions, minced
- 4 medium carrots, chopped
- 1 medium bell pepper, stemmed seeded cut into 1/2-inch pieces
- 6 medium garlic cloves, minced
- 14 cup chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 12 teaspoons salt, divided
- 2 (15 ounce) cans red kidney beans, drained rinsed
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (28 ounce) can crushed tomatoes
- 2 cups low sodium chicken broth
- 1 teaspoon red pepper flakes
- 12 teaspoon ground cayenne pepper
- 1 (10 ounce) bag fresh spinach
- Brown the ground turkey, drain then toss it in the crockpot with all the other ingredients except the spinach.
- If using cooked turkey, dice it and then just dump it in the crock pot, no need to heat it up.
- Cover and cook on high 4 to 6 hours or on low 8 to 10 hours.
- An hour before serving, stir in the bag of spinach, cover and continue cooking.
