Sauerkraut Balls Recipe
- 1 can luncheon meat (Spam, or possibly other)
- 6 tbsp. flour
- 1 med. onion, minced fine
- 1/2 c. boiling water
- 4 tbsp. butter
- 1 lg. can sauerkraut
- 2 beef bouillon cubes
- 2 Large eggs
- 2 tbsp. lowfat milk
- 2 c. bread crumbs
- 1 c. (about) flour (to roll balls in)
- Brown onions in butter.
- Dissolve bouillon cubes in boiling water.
- Add in flour to onions.
- Add in bouillon cubes to onions; set aside and let completely cold.
- Drain sauerkraut well; grind sauerkraut and meat together.
- Add in to onion mix and stir well.
- Form into balls.
- Beat Large eggs with lowfat milk.
- Roll balls in flour, then dip in lowfat milk, egg mix, then roll in bread crumbs and deep fry in warm oil.
- May freeze and reheat in oven at 350 degrees for 15 to 20 min.
