Trail Mix Cookies
- 13 cup sucanat
- 3 egg whites
- 2 tablespoons olive oil
- 3 tablespoons unsweetened applesauce
- 1 teaspoon vanilla
- 2 tablespoons natural-style peanut butter
- 13 cup dried cranberries
- 1 cup whole wheat flour
- 34 cup wheat bran
- 14 cup unsweetened coconut
- 12 teaspoon baking soda
- 12 teaspoon cinnamon
- 14 cup ground flax seeds
- 14 cup slivered almonds
- 14 cup dark chocolate chips (mini)
- Mix first 7 ingredients in a medium sized bowl.
- Mix flour and remaining ingredients in another bowl leaving aside the slivered almonds & chocolate chips.
- Combine wet ingredients with dry and then stir in chocolate chips and almonds.
- Roll into balls and place on a lightly greased baking sheet.
- Bake at 350 for 12 -13 minutes.
