Rosemary Chicken Recipe
- 8oz Angel hair pasta
- 2 tsp olive oil
- 2.5 pounds boneless, skinless chicken breasts or thighs
- 3/4 tsp salt
- 3/8 tsp pepper
- 1.5 cup green onion chopped finely
- 1 cup dry white wine
- 1 Tbsp minced fresh rosemary
- 1 1/2 c chicken broth
- 1/3 c whipping cream or 2/3 cup half & half
- Cook pasta
- Heat olive oil over medium-high in a large, non-stick skillet
- Add chicken and cook 3-5 minutes on each side until nicely browned
- Toss in onions, wine, and rosemary and cook for 1 minute
- Stir in broth and cook for 2 minutes or until chicken is done (may take longer for thick breasts)
- Add cream, stir, remove from heat and serve over the pasta adding a couple of spoons of extra sauce over each serving.
