Beef and Grilled Vegetable Kabobs with Couscous

  1. Heat barbecue to medium-high heat.
  2. Chop 1/2 onion; set aside.
  3. Cut remaining onion into 8 wedges.
  4. Mix oil and 1 tsp.
  5. garlic in medium bowl.
  6. Add tomatoes; toss to evenly coat.
  7. Thread 2 each tomato halves and onion wedges onto 2 parallel wooden skewers.
  8. Repeat with 6 additional skewers and remaining tomato and onion pieces.
  9. Reserve 1/4 tsp.
  10. of the remaining garlic.
  11. Mix remaining garlic with chopped onions, meat, parsley, barbecue sauce and cinnamon just until blended.
  12. Shape into 8 (1-inch-thick) oval-shaped patties.
  13. Grill patties 6 min.
  14. ; turn.
  15. Add skewered vegetables to barbecue; grill 6 to 8 min.
  16. or until patties are done (160 degrees F) and onions are crisp-tender, turning skewers after 4 min.
  17. Meanwhile, bring broth to boil in medium saucepan on side burner of barbecue.
  18. Remove from heat.
  19. Stir in couscous; cover.
  20. Let stand 5 min.
  21. Mix dressing, remaining garlic and mint until blended.
  22. Drizzle dressing mixture over meat.
  23. Serve with couscous and vegetables.
