Mashed Potatoes and Apples with Bacon and Onions

  1. Peel and dice the potatoes and apples.
  2. Add to a large pot and just cover with cold water and the 1/2 teaspoon of salt over high heat.
  3. Bring to the boil and reduce heat to medium.
  4. Cook until just tender, about 15 minutes.
  5. Meanwhile, cook the bacon until crisp and remove to paper toweling to drain.
  6. Discard all but 1 teaspoon of the bacon fat.
  7. Add the onions and cook over medium heat until well browned and caramelized.
  8. Set aside.
  9. Drain the potatoes well and return to the cooking pot over medium low heat to help evaporate any excess moisture.
  10. Mash the apples and potatoes in the pot.
  11. Once mashed sufficiently continue stirring with a wooden spoon.
  12. Add the butter, cider vinegar and 18 teaspoon of sugar.
  13. Taste and adjust seasoning with salt and black pepper as needed.
  14. Remove from heat and transfer to a serving dish.
  15. Top with the caramelized onions and crispy bacon bits.
  16. Serve family style.
