Mashed Potatoes and Apples with Bacon and Onions
- 1 pound potatoes
- 1 pound apples, granny smith or other tart variety
- 1/2 teaspoon salt
- 2 slices bacon cut into 1/4 inch pieces
- 2 each onions or one large
- 2 tablespoons butter
- 2 teaspoons apple cider vinegar
- 18 teaspoon sugar
- Peel and dice the potatoes and apples.
- Add to a large pot and just cover with cold water and the 1/2 teaspoon of salt over high heat.
- Bring to the boil and reduce heat to medium.
- Cook until just tender, about 15 minutes.
- Meanwhile, cook the bacon until crisp and remove to paper toweling to drain.
- Discard all but 1 teaspoon of the bacon fat.
- Add the onions and cook over medium heat until well browned and caramelized.
- Set aside.
- Drain the potatoes well and return to the cooking pot over medium low heat to help evaporate any excess moisture.
- Mash the apples and potatoes in the pot.
- Once mashed sufficiently continue stirring with a wooden spoon.
- Add the butter, cider vinegar and 18 teaspoon of sugar.
- Taste and adjust seasoning with salt and black pepper as needed.
- Remove from heat and transfer to a serving dish.
- Top with the caramelized onions and crispy bacon bits.
- Serve family style.
