Randy's Chicken Marinade
- 1 orange (preferably Cara Cara)
- 1 lime
- 1 lemon
- 2 -3 large garlic cloves
- 1 small white onion
- 1 teaspoon Mexican oregano
- 1 teaspoon dried hot red chili pepper (chipotle, ground)
- 1 tablespoon dried red chili (mulato, pasilla, or ancho)
- 2 teaspoons kosher salt
- 14 cup white tequila
- 14 cup olive oil
- Peel and de-seed the citrus fruits and cut each in half.
- You may need to cut the halves into much smaller pieces if using a food processor or regular blender.
- Combine all ingredients in a blender jar or food processor work bowl and puree it.
