BLT Pasta
- 1 pound Pasta (spaghetti)
- 6 slices Bacon
- 2 cloves Garlic, Minced
- 2 Lemons, Juiced
- 1/4 cups Olive Oil
- 1 Large Bunch Arugula
- 1 Handful Fresh Basil
- 2 cups Tomatoes (cherry Or Chopped Into Bite Size Pieces)
- Kosher Salt And Cracked Black Pepper
- Bring a large pot of salted water to a boil.
- While waiting for it to come to a boil, put the bacon on to fry over medium heat.
- Cook the bacon until crisp, and then set aside to drain on a paper towel.
- (Save the pan and drippings.)
- Cook the pasta according to manufacturers directions.
- Combine the garlic, lemon juice and olive oil in a small bowl.
- Add the vinaigrette to the pan and bring to a simmer.
- Add the pasta to the pan and toss with the hot vinaigrette.
- Add the chopped bacon and the arugula, basil and cherry tomatoes to the pasta and toss.
- Season with kosher salt and black pepper and serve on a platter.
- Suggestion: Top with crab if possible.
