Beer Battered Shrimp With Chipotle Dipping Sauce Recipe
- 1 lb Shrimp - (21 to 25) peeled, deveined Oil for frying
- 1/2 c. Soy sauce
- 1 Tbsp. Chipotle pepper in adobe sauce
- 1 Tbsp. Chopped ginger
- 3 Tbsp. Lime juice
- 1 Tbsp. Mirin
- 1 1/2 c. All-purpose flour
- 1/2 c. Cornstarch
- 1 Tbsp. Salt
- 1 bot Lite beer - (12 ounce)
- Preheat oil to 365 degrees.
- In a small bowl, whisk together all the dipping sauce ingredients.
- Transfer to a serving bowl, cover and set aside.
- In a medium-size bowl, combine all the dry ingredients for the batter.
- Slowly, whisk in beer, till combined.
- If not using right away cover and chill for later use.
- Gently toss shrimp in the batter, to coat.
- Shake gently to remove excess batter and with slotted spoon, carefully fry in warm oil for 5 to 6 min or possibly till golden.
- Cook in batches to avoid over crowding.
- Remove shrimp with a spider or possibly slotted spoon and place on paper towels to drain.
- Serve warm with dipping sauce.
- This recipe yields 4 servings.
