Couscous pasta salad
- 1 cup chicken broth
- 1 cup Couscous
- 1/4 cup Red Onion - Diced
- 1 cup Cucumber - Diced
- 1 cup Cherry Tomatoes - Halved
- 1 cup Brocolli - Chopped
- 2 tbsp Fresh Dill
- 1/3 cup Feta Cheese
- 2 tbsp Balsamic Vinegarette Salad Dressing
- 1/4 tsp Salt
- Bring chicken broth to boil in a small pot.
- Remove from heat.
- Quickly pour in Couscous and stir briefly, then cover pot.
- Let stand for 5 minutes.
- Then fluff with a fork and stir in the herb a bit.
- Chop up all your veggies.
- Place in bowl.
- Add Coucous to the same bowl and the rest of the ingredients.
- Stir it all up.
- You can eat it right away, but it's best to let it sit covered in the fridge for at least an hour first or preferabley overnight.
