Bolognese Sauce
- 2 Tablespoons Butter
- 1/4 pounds Diced Bacon
- 1 Chopped Onion
- 2 cloves Garlic, Minced
- 1 pound Ground Beef Or Veal
- 1 cup Chicken Stock
- 1/2 cups White Wine (you Can Use Red)
- 2 Tablespoons Tomato Paste
- 1 can (14 Oz. Size) Italian Style Tomatoes
- 1 teaspoon Dried Oregano
- 3/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/2 cups Heavy Cream
- Freshly Shaved Parmesan Cheese, To Serve
- Heat the butter and bacon over low heat.
- Cook until the bacon renders some fat, about 3 minutes.
- Add the onion and cook until soft, about 3 minutes longer.
- Add garlic and cook for 1 minute; do not brown.
- Stir in the beef and cook just until no longer pink.
- Add the stock, wine, tomato paste, tomatoes and seasonings.
- Simmer, stirring occasionally until the sauce thickens, about 30 minutes.
- Stir in the cream and remove from heat.
- Serve over any pasta and top with freshly shaved parmesan cheese.
