Chow Mein
- 1 1/2 c. celery strips
- 1 large onion, cut into small wedges
- 1 c. pepper strips
- 1 clove garlic
- 2 Tbsp. oil
- 3/4 to 1 lb. ground beef
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. cornstarch
- 1 1/3 c. water
- 2 Tbsp. soy sauce
- 1 1/2 c. boiling water
- 1 1/2 c. instant rice
- 1/2 tsp. salt
- Saute first four ingredients in oil.
- Remove from the saute pan.
- Then brown the ground beef with 1 teaspoon salt and pepper. Drain off any fat.
- Combine cornstarch with water.
- Mix with soy sauce.
- Add to meat and vegetables.
- Cook and stir until thickened. Move mixture to the side of the pan.
- Add boiling water and instant rice; add 1/2 teaspoon salt.
- Cover and remove from heat; let stand for 5 minutes.
- Fluff with fork; then serve.
