Bone and White Corn Soup (Microwave)

  1. Soak the beans in cold water to cover.
  2. Overnight is best.
  3. Remove meat from the ham bone, cut it into 1/2" cubes (about 3 cups), and reserve.
  4. Drain beans and place in the crockpot along with the meat from the bone.
  5. Add corn,chicken, chicken stock, oregano,paprika,.
  6. chili powder,black pepper, bay leaves, if using, and additional water or stock if needed, to slightly cover.Place the lid on the crockpot and cook on HIGH for 3 to 4 hours.
  7. Add the remainion ingredients except reserved ham cubes and green onions, mix well.
  8. Shift cooker to LOW setting, and cook for about 5 additional hours.
  9. For more "zing", add cayenne or crushed red pepper flakes when adding second set of ingredients.
  10. About 30 to 40 minutes before the end of the cooking time, remove bay leaves; mash some of the beans against the side of the liner to thicken the soup slightly; add the reserved ham cubes and sliced green onions.
  11. Taste, and adjust seasoning, if necessary.
