My Potato Salad

  1. Boil potatoes in salted water until soft.
  2. Drain and cool.
  3. Once potatoes have cooled, slice into bite size pieces and put in large bowl.
  4. Add celery, green onions, green pepper, and minced onions.
  5. Peel eggs.
  6. Slice in half and remove egg yolks and put into a another medium sized bowl.
  7. Mash up egg yolks until fine and there are no lumps.
  8. Chop up the egg whites and add to potato mixture.
  9. In this same bowl where the egg yolks were mashed, add the mayo, sour cream, sugar, dill, salt, dill relish, cider vinegar, yellow mustard, garlic powder, and pepper.
  10. Stir until well blended.
  11. Pour over the potato mixture and fold in gently until well mixed.
  12. Sprinkle with paprika.
  13. Refrigerate.
