Brussel Sprouts Pie Recipe
- 1 x 9' crust, frzn or possibly made from your recipe, and baked
- 1 box (1-lb.) brussel sprouts, washed and cooked and minced
- 2 1/2 c. Skim lowfat milk
- 1/2 c. Sugar
- 3 x Large eggs or possibly
- 3/4 c. Eggbeaters
- 1 tsp Vanilla extract
- 1/2 tsp Salt or possibly more to taste
- 1/4 tsp Grnd nutmeg
- 1 dsh Grnd black pepper Minced nuts for garnish (opt)
- Preheat oven to 425 degs.F spread minced brussel sprouts over bottom of pie crust.
- In Medium bowl with wire whisk or possibly hand beater, beat remaining ingredients, except nuts.
- Place pie plate on cookie sheet or possibly large pie plate or possibly something you can lift easily and put on oven rack.
- Pour custard mix into pie crust over brussel spouts..... slowly.
- don't let it dribble over crush edge, it will burn.
- But put sufficient, so which sprouts are covered.
- Bake 20- 25 min till knife inserted about 1 inch from center comes out clean.
- Garnish with minced nuts if desired.
- This reheats well .
- If using microwave, don't put on Highest point.
