Warming Soup for Soba
- 150 grams Chicken
- 200 grams Daikon radish
- 1/2 Carrot
- 1/2 bag Shimeji mushrooms
- 1/2 pack Maitake mushrooms
- 1000 ml Japanese dashi stock
- 4 tbsp Mentsuyu
- 3 tbsp Soy sauce
- 1 1/2 tbsp Mirin
- 1 1/2 tbsp Sake
- 1 tbsp Sugar
- 2 tsp Rock salt (or regular salt is okay)
- Cut the chicken into bite-sized pieces.
- Cut the daikon radish and carrots into wedges.
- Shred up the mushrooms.
- Re-hydrate the koya dofu and cut into bite-sized pieces.
- Add the daikon radish and carrots into the dashi stock.
- Once they're cooked through, add the chicken.
- When the chicken turns white, add the mushrooms.
- Combine the ingredients and add to the soup to season.
- Add the koya dofu while adding the seasonings.
- (If you add the koya dofu first, it will break apart.)
- Lightly simmer the mixture while skimming the scum off the surface, allowing the seasoning to permeate the ingredients.
- Put some boiled soba in a bowl, pour in a generous amount of the soup, and it's done.
- Garnish as you like with chopped green onion to make it even more delicious.
