Vietnamese-Style Fresh Rolls
- Dipping Sauce
- 1 Tbsp. sugar
- 2 Tbsp. each warm water and lite soy sauce
- 1/4 cup Kraft Smooth Peanut Butter
- 1/2 tsp. hot pepper sauce
- Lettuce Rolls
- 12 large leaf lettuce leaves
- 180 g (about 1/5 of 900-g pkg.) vermicelli pasta, cooked, drained and cooled
- 3/4 lb. (340 g) frozen cooked cleaned medium shrimp, thawed
- 1 bunch mint leaves
- 1 bunch green onions (green tops only), cut into 6-inch lengths
- 3/4 cup matchlike English cucumber sticks
- 2 carrots, cut into thin sticks Target 2 lb For $3.00 thru 02/06
- Dipping Sauce: Dissolve sugar in warm water in small bowl.
- Whisk in peanut butter until well blended.
- Add soy sauce and hot pepper sauce; mix well.
- Lettuce Rolls: Top lettuce leaves with pasta, shrimp, mint and vegetables.
- Fold in both sides of each leaf, then carefully roll up.
- Serve with Dipping Sauce.
