Cheese Pastry
- 3 ounces cream cheese, room temperature
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1/4 teaspoon salt
- 1/4 cup freshly grated Parmesan cheese
- 1 1/2 cups all-purpose flour
- Combine the cream cheese, butter and salt in a large bowl or in a food processor fitted with the metal blade.
- Mix or process until smooth.
- Add the Parmesan cheese and flour and mix to combine.
- Gather the dough into a ball, flatten to a disc and wrap in plastic wrap.
- Refrigerate for 30 minutes before rolling.
