Bamia Stew Recipe
- 1/2 lb Grnd lamb or possibly beef
- 1 lrg Onion, minced
- 2 x Cloves garlic, chopped
- 4 lrg Tomatoes, minced
- 6 ounce (1 can) tomato paste Salt
- 1 tsp Dry coriander
- 1 tsp Cumin
- 1/2 tsp Grnd black pepper
- 1 1/8 lb Okra, washed, heads removed
- 1 Tbsp. Tamarind pods, soaked in water
- Brown the meat without oil till it absorbs all its liquid.
- Add in the onions, then the spices and garlic.
- Mix well and add in the minced tomatoes.
- Cover and let cook on medium heat.
- Add in the water when the tomatoes appear to soften.
- Let it simmer for 15 min, then add in the okra, tomato paste and salt.
- Let the stew cook slowly and towards the end add in the strained tamarinds.
- Serve warm with rice
- NOTES : An okra stew very popular in the Middle East.
- Served with rice.
