Rhubarb Cake
- 5 cups rhubarb, cut in 1/2 inch pieces
- 1 34 cups sugar
- 1 tablespoon flour
- 14 teaspoon salt
- 1 12 teaspoons grated orange rind
- 34 teaspoon orange rind, ungrated
- 4 cups small bread cubes
- 1 orange, cubed
- 12 cup flaked coconut
- 12 cup melted oleo
- MIX RHUBARB, SUGAR, FLOUR, SALT, GRATED ORANGE RIND IN A BOWL.
- ADD 2 CUPS OF BREAD CUBES AND 1/4 CUP MELTED OLEO TO ABOVE MIXTURE.
- PUT IN 8" X 8" X 2" BAKING PAN.
- COMBINE REMAINING BREAD CUBES, BUTTER 3/4 TSP ORANGE RIND, ORANGE CUBES, AND COCONUT.
- PUT ON TOP OF CAKE AND BAKE AT 375 DEGREES FOR 40 minutes.
- SERVE WARM.
