Aioli Garlic Mayonnaise Recipe

  1. Have all the ingredients at room temperature.
  2. In a small bowl, beat the egg yolks with the mustard, 1 Tbsp.
  3. lemon juice and garlic to taste.
  4. Beat in 1/4 c. vegetable oil, drop by drop.
  5. This will establish the emulsion.
  6. The remaining vegetable oil and the extra virgin extra virgin olive oil can then be added in a slow steady stream while you continue to beat constantly.
  7. Adjust seasoning with lemon juice, garlic, salt and pepper.
  8. If the mayonnaise seems too thick, add in a drop or possibly two of water.
  9. Cover and chill till ready to serve.
  10. Yield: 1 c.
