Dijon Chicken
- 8 chicken drumsticks, skinned
- 3 tablespoons stone ground dijon mustard
- 23 cup panko breadcrumbs
- 1 12 teaspoons dried herbs (such as tarragon, thyme or oregano)
- 12 teaspoon salt
- 14 teaspoon black pepper
- Preheat oven to 450.
- Line baking sheet with parchment paper or foil and lightly spray with non-stick spray.
- Set aside.
- Brush the drumsticks with the mustard.
- Mix Panko, herbs, salt and pepper in large zip close plastic bag and add the drumsticks.
- Shake to coat the drumsticks.
- Place the drumsticks on the prepared baking sheet and sightly spray with non-stick spray.
- Bake until browned and cooked through, 35-40 minutes, spraying the drumsticks with non-stick spray halfway through the baking time.
- Let stand about 5 minutes before serving.
