Cordon Bleu Chicken Casserole
- 6 small boneless skinless chicken breasts (1-1/2 lb./675 g)
- 6 slices deli smoked ham (75 g)
- 6 Cracker Barrel Swiss Cheese Slices
- 2 cups tightly packed baby spinach leaves
- 1 red pepper, cut into strips
- 1 can (10 fl oz/284 mL) condensed cream of chicken soup
- 1/2 cup sour cream
- 1 Tbsp. Dijon mustard
- 1 cup croutons, coarsely crushed
- Heat oven to 400F.
- Place chicken in 13x9-inch baking dish sprayed with cooking spray; top with ham, cheese, spinach and peppers.
- Mix soup, sour cream and mustard until blended.
- Spoon over ingredients in baking dish; spread to evenly cover all ingredients.
- Top with crushed croutons.
- Bake 25 min.
- or until chicken is done (165 degrees F) and remaining ingredients are heated through.
